Key Responsibilities
As the leader of our Galley team, you will be the architect of our culinary operations, ensuring every dish reflects Viking’s premium standards. Your comprehensive duties will include:
- Managing all food production areas within set budgets, meticulously controlling costs through portion control and adjusted food requisitions.
- Collaborating closely with the Inventory Manager on all food orders, consumption, and inventory management, applying FIFO principles.
- Continuously elevating food quality and presentation, hosting Kitchen Table events, and conducting cooking demonstrations for our guests.
- Ensuring strict adherence to all menus, recipes, and Viking’s Standards, with daily spot-checks across all food outlets.
- Upholding impeccable Public Health Policies through regular inspections with the Public Health Officer and Kitchen Steward.
- Leading, mentoring, and motivating a multi-cultural team, maximizing crew satisfaction, productivity, and retention.
Qualifications
We are looking for a decisive and inspirational leader with an unwavering commitment to quality. The ideal candidate will possess:
- Shipboard or premium hospitality experience with at least 2-3 years in an Executive Chef role; advanced culinary skills are mandatory.
- Fluent in English with excellent communication skills; the ability to speak additional languages is a advantage.
- Proven experience in leading and developing multi-cultural teams; must be a flexible, stress-resistant team player.
- Strong administrative skills and proficiency with PC-based databases, spreadsheets, and word processing systems.
- A guest-focused, service-oriented personality with a professional appearance and comprehensive knowledge of Public Health policies.
- Must be at least 21 years old, physically able to handle 50+ lbs daily, and work a minimum of 11 hours per day, 7 days a week.
